To attain its powder form, the lucuma fruit is first dried and dehydrated at low temperatures before being milled. Raw, organic lucuma powder is often favoured over granulated sugar for its high nutritional value. It is commonly used as a low Glycemic Index (GI) sweetener and does not increase blood sugar in the same way as many of its counterparts, making it an ideal substitution for people with diabetes. In addition to having anti-inflammatory properties, organic lucuma powder is also said to help with tissue regeneration.
